Fontina Stuffed Chicken Breasts

Brooks always comes up with some of the tastiest creations. I always love when he decides to cook...and this chicken...YUM!!! This dish is packed with flavor!

Serves 4
Ingredients:
4 chicken breasts
4 slices of bacon
1 cup grated fontina cheese
2 garlic cloves-minced
6 ounces sun dried tomatoes-chopped
3 tablespoon basil-thinly chopped
salt and pepper

Pound the chicken breasts until they are thin. Mix together the sun dried tomatoes, cheese, garlic and basil. Put about two tablespoons of the mixture in each chicken breast and roll. Sprinkle a little salt and pepper on the outside of the chicken. Wrap chicken in a slice of bacon. Soak a few tooth picks, and then put through the chicken breasts to help hold together. Brown chicken breasts for about 30 seconds or so on each side. Then put into a baking dish. Bake at 350 for about 25-30 minutes, until fully cooked.
