Bourbon Chicken

I have no idea why this dish is called bourbon chicken...there is not a drop of bourbon in it. I found this recipe over on The Blog Chef. It is seriously so good-the perfect amount of sweet and spicy And really, you should have most of this in your pantry. So make it tonight:)

4 chicken breasts
cornstarch
Oil

1 garlic clove-minced
1/4 teaspoon ginger
1/4 teaspoon crushed red pepper flakes
1/3 cup apple juice
1/3 cup brown sugar
2 tablespoon ketchup
1 tablespoon cider vinegar (I only had regular vinegar though and it still tasted great)
1/2 cup water
1/3 cup soy sauce

Cut up the chicken into bite sized pieces. Dust with cornstarch. Fry in about a cup of oil until chicken is brown. Drain on a paper towel.
Combine all ingredients for the sauce. Then pour into pan and bring to a boil. Then reduce heat and add chicken. Let simmer in the sauce for about 10-15 minutes. Serve with rice. Enjoy!

I've been making this recipe for a long time...posted it on my blog, too. Though I've also tried it just as a plain 'ol stirfry sauce base and added any random veggie in the mix and it always turns out FABULOUS! Every time my hubby says, "man! I really like this stirfry!" Seriously. Too funny!

This looks soooo good. It looks similar to another dish I make that I like so I'll give this a try too.
