Honey Lime Chicken Enchiladas

I swear a long time ago I saw a recipe for honey lime chicken enchiladas on tv...but I have no idea what the recipe was. So I just threw a few things together and hoped that it turned out. It was a big hit, and a much needed comfort food. I had just put the enchiladas in the oven and Brooks called me because he had gotten in an accident. Luckily he was ok...just minor damage to his car, but plenty of other damage to three other cars involved! I was so stressed and worried about him, and I was trying to squeeze in dinner before taking my son to his basketball game...but we had to eat. These enchiladas hit the spot. The flavor was perfect. Just enough sweet to the spice. When Brooks was finally able to eat...he gave his two thumbs up!
   


4 chicken breasts-shredded
4 tablespoons lime juice-or juice from a lime
5 tablespoons honey
1 teaspoon chili powder
1 teaspoon garlic powder
6-8 flour tortillas
mexican cheese or cheddar-we only had cheddar on hand
1 can green enchilada sauce

Mix together the chicken, lime juice, honey, chili powder, and garlic powder. Layer a small amount of your enchilada sauce on the bottom of your 9x13 pan. On your tortillas put about 1/4 a cup of your chicken mixture, then sprinkle with cheese and roll up. Place seam side down. Once all rolled up, pour the enchilada sauce on your enchiladas. Then sprinkle with cheese. Bake at 350 for 25 minutes.

BTW, it freezes really well if you use flour tortillas for the pan going into the freezer. Corn tortillas just don't hold up as well.

I bet that is the recipe I saw! I remember thinking it looked so dang good...but it was forever ago so I didn't remember if it was GTU or Studio 5! Good tip on freezing!

I think this is the same recipe we use too and we LOVE IT! we made your meatballs again with spaghetti (not in a sandwhich) and I think its the first dinner ellie has eaten with us! so I can't thank you enough.
