Rasberry Tiramisu` (Kind Of)

We don't drink alcohol, we don't drink coffee, but we wanted some Tiramisu`.  This is when the creative juices got to flowing, and we thought why not.... hope you enjoy, we sure did!



Ingredients:
5 egg yolks
1/3 cup sugar
1 can cherry Coke (Coke Zero works as well)
1 package Milano cookies from Pepperidge farms
1 package biscotti cookies (If you can find them thick with chocolate on the bottom it's best)
1 package of cool whip
1 cup fresh raspberries
 Cocoa powder

In steel bowl, separate the yolks from the whites and begin whisking in the sugar and 1/3 cup of the Coke. Now over a skillet or pan with water barely simmering, whisk the eggs until they reach 160 degrees.  Let cool for at least 15 minutes.  Once cool, fold in 1/2 of the cool whip just until combined, don't over mix it needs to stay fluffy.

 Take the biscotti cookies and soak them in the remaining Coke for about 10 seconds each, placing them chocolate side down in a small glass baking dish side by side until leaving about 1/2 inch between them.  Next spread over some of the mixture until it is covered.  Sprinkle in the raspberries over the custard.   Next, soak the Milano cookies in the Coke and layer over the custard.  Spread the rest of the custard over the cookies. Then dust with cocoa powder.

Let chill for 10-20 minutes and serve.  You can top each serving with leftover raspberries and whip cream. It's a recipe worth the effort, because it was phenomenal.

That looks sooo good! I'm not quite that adventurous to try to make it...but I did make your chocolate chip oatmeal cookies today! They're aweseome!
