Rubio's

     Have you ever heard of Rubio's? Chances are with over 200 locations you might have. I am sad to say that until we were invited to meet the founder, Ralph Rubio for lunch last week, we had never been. Boy were we missing out. 
     Ralph Rubio fell in love with fish taco's when traveling to Mexico during college. He decided to make his passion for fish tacos into a business.  He started Rubio's with the intention of selling authentic fish taco's and his expanded his menu to include great items such as gourmet tacos, burritos, salads and a wonderful fresh salsa bar. 
     Rubio's has a large menu with so many options, and we had the opportunity to sample many of their entrees.  I loved the fish tacos (which by the way, Tuesdays are fish taco day, and they are only $1.25 each). That is coming from a girl who isn't a big fish fan. They chose a fish that doesn't really have that "fishy" taste in order to enjoy the fresh cabbage, corn tortilla and other stellar ingredients without the overpowering of a strong flavored fish.
    Their gourmet tacos were to die for! He received motivation for these by seeing young men in taco carts frying up cheese on the flat iron, then flipping it over with the tortilla on top, and adding gourmet ingredients.  You can choose from steak, shrimp or chicken all of which come with a phenomenal dressing that is perfect for the protein you choose.
     I just loved the salsa bar. I come from a family where chips and salsa are the snack of choice. There were so many choices of salsa that include picante, for the hot fans, chipotle for the smokey flavor, and their mild and medium for more traditional taste.
    We make home made guacamole all the time, when I heard how simple his recipe was, and then tasted how much better, I knew I had been doing it all wrong. His recipe is so fresh and made only of avocado, garlic and lime juice. Ralph really focuses on letting the main ingredient do the work in most of his recipes.
     I really loved everything they offered to us. I walked away so full! We loved Rubio's so much that we went back two days later!  This just might become our weekly staple!  Thanks Ralph.

Happy to hear you have experienced Rubio's. Here in SoCal it is a weekly staple : ). Now if we could just get a Cafe Rio down here: ).

I LOVE the Shrimp Gourmet Tacos. I could just drink the sauce it's so tasty!
