Oh how we love pasta. I loved it before I married Brooks. But since we have gotten married, my love for Italian food has grown. I always tell Brooks we should move to Italy just for the food. Maybe one day...
Serves 6
Ingredients:
1 box of fettuccine
2 chicken breasts, grilled and shredded
5 cups of fresh spinach
1/2 cup toasted pine nuts
1 garlic clove, minced
1 1/4 cups milk
1 (8 oz) package cream cheese
1/4 cup parmesan cheese, grated
1/4 teaspoon nutmeg
salt and pepper
While pasta is cooking, grill up chicken. In a sauce pan, stir milk, cream cheese, parmesan, nutmeg and salt and pepper. Whisk until smooth. When chicken is done, shred and add to a skillet with garlic clove, pine nuts and spinach. Saute for just a few minutes. When pasta is done, drain. Combine chicken, nuts and spinach with pasta and sauce and serve.
