Easy Lettuce Wraps

Lettuce wraps are one of those things that I was always intimidated by. But really they are so easy to make. You can customize them to your families taste with seasonings and veggies. Just add a side of fried rice and you have a perfect meal!
  

Serves 5
Ingredients:

4 chicken breasts, chopped into bite size pieces
1 garlic clove, minced
1/4 cup celery, diced
1/4 cup carrots, diced
1/2 red pepper, chopped
1 small zucchini, chopped
1/4 cup green onion, chopped
1/4 cup chopped almonds
1 tablespoon teriyaki sauce
1 tablespoon soy sauce
1 teaspoon hoisin sauce
salt and pepper
iceberg lettuce leaves

Chop your chicken into bite size pieces. Then cook in a medium high skillet with a little bit of olive oil until cooked through. Then add your veggies. Saute for 2-3 minutes. Add salt, pepper, hoisin, soy and teriyaki. Let simmer for 2 minutes or so to let the flavors incorporate. Scoop a few spoonfuls onto lettuce leaf and top with almonds, and a little hoisin if you like a kick! Enjoy!

oh, I love lettuce wraps and this recipe looks fantastic!!

PS: if you have a PF Chang's near you, they have the BEST lettuce wraps! Unfortunatly the nearest one to me is 150 miles away :(
