Chinese Chicken

This is another recipe from our neighborhood cookbook...my friend Steph shared this amazing recipe. Seriously...we loved this chicken. It was so moist and full of flavor. Can't wait to make this one over and over again!

Ingredients:

1 whole chicken
1 tablespoon olive oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water 
1/4 cup ketchup
1/2 cup apple juice
1/2 teaspoon crushed red pepper
1 garlic clove, minced
2 tablespoons cornstarch
1 tablespoon water
2 teaspoons sesame seeds
green onion for garnish

In a dutch oven (or large pot), heat olive oil. Brown chicken on all sides. In bowl, mix together soy sauce, brown sugar, water, ketchup, apple juice, red pepper flakes, and garlic. Pour over chicken. Bake 350 for 30-45 minutes, or until internal temperature reaches 175. Remove from oven. Take chicken out of the pan. In a bowl mix mix water and cornstarch and stir into the sauce. Stir until thick. Add sesame seeds. Slice chicken and serve over rice and veggies, and top with sauce. Enjoy!
