Azteca Taco Salad

This is one of those recipes I have saved Microsoft Word...that I got from how knows where! 
With Summer right around the corner (at least that is what we are hoping for), and soccer practice, baseball practice and games most nights of the week, it can be hard to find time to make dinner. Salads are something easy that you can make ahead and pull out in time for dinner. And I honestly love a good salad. I could eat salad for dinner every night and be happy. Seriously. With this recipe, choose your favorite meat. We used ground chicken, but feel free to use turkey or hamburger, or go without meat! You choose. 
Ingredients:

1/2 pound ground meat (chicken, turkey, beef)
1 head lettuce, chopped
1 can kidney beans, rinsed and drained
1 tomato, diced
1/4 cup black olives, sliced
1/4 cup cilantro, chopped
1/4 cup green onions, chopped
3/4 cup cheddar cheese, shredded
Fritos

Combine all ingredients, except Fritos. Refrigerate until ready to serve.

Dressing:
1 cup sour cream
1/2 cup red wine vinegar
1/2 cup canola oil
1 1/2 teaspoon cumin
1/2 teaspoon chili powder
1 teaspoon salt
1 teaspoon pepper
1 1/2 tablespoons lime juice

Whisk together all ingredients. Chill for at least an hour before serving. When serving top salad with Fritos and dressing!
