Carne Asada Tacos

My uncle lives in Southern California...pretty much as south as you can get in California. Every time he comes to visit he brings a bunch of carne asada. (Sorry Lynn, but it might be my favorite part about you visiting:)). This recipe is so packed with flavor and is so darn good, you will thank me for it.
We use chicken and steak, so depending on what kind of meat fan you are, that is what you will want to get at the store (or get both!). Also, you want to marinate this for at least 12 hours. So keep that in mind when you make this. The longer it marinates, the better it tastes!

Ingredients:

3 pounds carne asada (ask your butcher)
1/3 cup white vinegar
1/4 cup soy sauce
3 garlic cloves, minced
2 limes, juiced
1/2 cup olive oil
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon garlic powder
salt and pepper

Mix together all the ingredients. In a zip lock bag add meat and mixture. Let marinate for at least 12 hours. Cook on the grill for about 5 minutes on each side. Then cut  into small strips. Serve on tortillas with your favorite taco toppings. You really don't need much because the meat is the star so maybe just a little sour cream, cheese and tomatoes. Enjoy.

French Dip

I always say I have the greatest of friends. They are always sharing their recipes with me...which I LOVE! This recipe comes from Rose, which actually she got from Hillary (ya know, one of those recipes that gets passed from person to person)...and dang, it was good. It was so simple! My only problem was that I actually cooked it a little bit to long, so when we were cutting the meat it was falling apart, hence the large slices.    



Serves 5-6
Ingredients:

1 4 lb roast beef
1/2 cup soy sauce
2 cups water
1 beef bouillon cube
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon garlic powder
swiss cheese
hard rolls

On the stove top, on a hot skillet, sear all sides of roast. Place in crock pot. Pour water, bouillon, and spices over the meat and cook on low for 6-8 hours, until meat is tender. Cut meat into thin slices, add to roll with a slice of swiss. Put broth into individual bowls for dipping and enjoy!

Barbeque Beef Sandwiches

1 (2-3 pounds) boneless beef or pork roast
1 teaspoon garlic powder
1 teaspoon onion powder
salt and pepper
1 bottle of bbq sauce
Put roast in the crockpot, and sprinkle with seasonings. Then pour the bbq sauce over the top.
Cook on low for 5 hours.
Shred meat and cook on low for another hour.
Yum!
