Caramel Brownies

A couple of months ago, my sweet friend brought me caramel brownies. They were all I could think about for days. But because I am always "borrowing" her recipes...I felt bad asking again. So I did a search of my own. I found a great sounding recipe from Mel's Kitchen Cafe. I didn't add nuts though because my kids are not a fan...but they do love brownies, so I didn't want to ruin it for them.
My mouth is seriously watering thinking about these. Seriously...there is nothing better (in my opinion) than brownies and caramel. All they need is a big scoop of Blue Bell vanilla ice cream!

Ingredients:

1 cup butter
12 ounces semisweet chocolate, chopped
1 1/2 cup sugar
4 eggs
1 tablespoon vanilla
1 1/4 cup flour
1/2 teaspoon salt
1 1/2 cups pecans, chopped (optional)
1 cup semisweet chocolate chips

14 ounces caramels (it is usually one bag)
1/4 cup heavy cream

In microwave safe bowl, melt chocolate and butter together. Start at 1 minute, check and stir, and continue until melted. Watch closely to not burn! Then whisk in sugar, eggs and vanilla until incorporated. Add flour and salt. Spread half of the batter into a 9x13 greased pan. Bake for 18 minutes at 350. Remove from oven and let cool for 20 minutes. While the brownies are cooling, melt in the microwave caramels and cream. Make sure to stir every minute of so. Immediately spread caramel layer over brownie layer. Sprinkle chocolate chips (and pecans). Then top with remaining brownie layer. Bake for another 20 minutes. Let cool before serving. YUM!!!

Pumpkin Chocolate Chip Brownies

I am kinda obsessed with pumpkin treats. I think it drives Brooks crazy...but I love it. You might all go crazy too, because I have found a bunch of new pumpkin recipes that I am dying to try. 
This recipe I found while browsing Pinterest. I knew I shouldn't have started using that site. It is so addicting. But it is the perfect place to save all your favorite things that you find on the web, without clogging up your "favorites." Anyway, I made these for Sunday dessert...and they were a huge hit. I can't decide if they are more like a brownie, cake, muffin, bread...or what really! But they sure are good!

Ingredients:

1/2 cup pumpkin puree
2 whole eggs
1 egg white
1 tablespoon vegetable oil
1 cup flour
1 teaspoon baking powder
1 teaspoon unsweetened cocoa powder
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon nutmeg
1/4 teaspoon salt
2/3 cup brown sugar
1/2 cup semi sweet mini chocolate chips

Combine pumpkin, eggs and vegetable oil. Mix well. In separate bowl mix together dry ingredients. Then combine wet and dry. Add chocolate chips. Spread onto a greased 11x7 (or 9x9 pan which is what I used). Bake at 350 for 15-20 minutes or until toothpick comes out clean. Enjoy!

Mint Brownies

I have said it a million times...I have a thing for brownies. They are one of my guilty pleasures. Last week I had some friends over to watch "The Bachelor" and I made these for the girls. I am pretty sure I ate the whole plate.
PS...were you excited about the outcome of "The Bachelor??"

Ingredients:

2 cups melted butter
3/4 cup cocoa
2 1/4 cups sugar
6 eggs
2 cups flour
1/4 teaspoon salt
2 teaspoons vanilla

Combine butter, cocoa, sugar and eggs. Then add flour salt and vanilla. Mix well. Spread onto a greased cookie sheet. Bake at 350 for 18-20 minutes, or until toothpick comes out clean. Let cool.

Mint Frosting:
1/2 cup butter
4 1/2 cups powdered sugar
5 tablespoons milk
2 1/2 teaspoons mint extract
green food coloring

Mix all ingredients well, and then spread onto the top of the brownies. Let rest for 30 minutes

1/2 bag milk chocolate chips
1/2 bag semi-sweet chocolate chips

Melt chocolate chips in microwave for 2-3 minutes, until fully melted. Pour over the top. Let rest another hour before serving.

Brownies

My very favorite thing to make is brownies. I don't know why. I just love them. The gooey chocolate, warm out of the oven. Yum! I always love to have a little ice cream...and sometimes caramel to top it off. This recipe is the one I grew up eating, and making growing up. I think most of my relatives make this same recipe...I am pretty sure it came from my Grandma. So this is for them! Love you guys!


Ingredients:

1/2 cup butter
2 cups sugar
3 eggs
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon baking soda
1 1/3 cup flour
3 squares of unsweetened chocolate

Cream together the butter, sugar, vanilla and eggs.  In the microwave melt the chocolate, it usually takes about 45 seconds to a minute. Add into the butter mixture the dry ingredients. Once all incorporated, add the chocolate. Mix well. Spread into a greased 9x13 pan, and bake at 350 for 22-25 minutes. Enjoy!

Toffee Chocolate Chip Brownies


1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon salt
2 cups and 2 tablespoons flour
1 cup melted butter
1/2 bag toffee chips
1/2 to 3/4 cup chocolate chips

Spread on a greased cake pan. Then add about half of a bag of toffee chips, and then semi sweet chocolate chips.
Bake at 375 for 7 minutes, remove from heat, and swirl in the chips, knocking down the edges. Then put back in oven for 23-25 minutes-when golden brown.
