Chicken and Broccoli Casserole

This dish reminds me of my Mom. She made it all the time growing up. I was never a big fan of broccoli as a little girl, but as I have gotten older I have learned to appreciate it! This dish is really easy, and can be made in the morning and just popped in the oven!
3 Chicken Breasts-shredded
2 cans Cream of Chicken
1 cup Mayonnaise
1 cup shredded Cheddar Cheese
1 cup shredded Monterey Jack Cheese
3 cups of chopped broccoli
salt and pepper

Mix all together and put in a casserole dish. Bake at 375 for 30 minutes, or until bubbly. Serve with rice.

Swiss Stuffing Chicken

Ok, so casserole type things DO NOT take good pictures. But I promise this is so good, and so comforting! I love this, and love making it, but I swear it doesn't taste quite like my Mom's!
4-6 chicken breasts
6 (or more depending on how much you like cheese) Swiss cheese slices
1 can Cream of Chicken
2 Tablespoons milk
1 box of premade stuffing
1/4 cup of butter, melted

Layer chicken breasts on the bottom of a casserole dish, then put a layer of swiss cheese on each piece of chicken. Mix together milk and Cream of Chicken and layer on top of cheese and chicken. Next put stuffing on top and then drizzle melted butter. Bake at 375 for 45-60 minutes.

Sausage Breakfast Casserole


Another Southern Classic

Ingredients:

6 eggs beaten

1/2 cup of milk

1 green bell pepper Chopped and Sauted

1 red bell pepper Chopped and Sauted

1 package of breakfast sausage browned.

5 slices of bacon crisped and crumpled

6 slices of bread buttered on one side

4 cups shredded cheddar cheese

In a caserole plan, place the 6 slices of bread butter side down in the pan. In a bowl, whisk the egg and milk together until fully beaten. Top the bread with the Cheese, and sauted peppers evenly. Spread out the sausage and pour over the egg and milk mixture evenly over the bread. Bake in a preheated 325 degree oven for 30 minutes, check the eggs to make sure they are cooked. Remove and top with crumpled bacon. Enjoy.
