Cowboy Caviar

Just a reminder...these recipes are from 4everstitchin'...enter the giveaway for more of these yummy recipes!
I have a similar recipe here. This is a perfect, healthy dip for a party, to snack on, or to use on top of your chicken tacos. 

Ingredients:
1 can corn, drained
1 can black-eyed peas, rinsed and drained
3 avocados, chopped
5 tomatoes, chopped
green onion, chopped
1/2 cup cilantro, chopped (or more depending on what you like)
1 lime, juiced
1 package "Good Seasoning" Italian dressing, prepared as directed

Mix together corn, beans, and veggies. Squeeze lime juice over the top, top with dressing. Use as much, or as little of the dressing that you would like. Serve with tortilla chips.

Avocado Dip

I LOVE dips. They are the perfect thing to snack on during the day. They are great for a party too.
This recipe comes from my friend Jade. It is super easy to make, and only has a few ingredients.

Ingredients:

4 ripe avocados
1 (24 oz) container cottage cheese
2 (8 oz) cream cheese, softened
1 teaspoon garlic powder
3 capfuls of lemon juice

Mash avocados. Then mix with cream cheese until smooth. Add cottage cheese, garlic powder and lemon juice. Mix gently until combined. Serve with potato chips.

Cheesy Bean Dip

It is Super Bowl Week here on the blog. We will be sharing a few new tasty appetizers. Of course be sure to check out our appetizer section for more recipes (we have SO MANY good ones)!
This recipe I got from my friend Anne Marie...it is such a good dip. We had it for the Rose Bowl, and it was a huge hit.

Ingredients:

2 15 ounce can refried beans
4 ounces cream cheese, softened
1 cup sour cream
1 4 ounce can chopped green chilies
1/2 an onion, chopped
1 1/2 teaspoons taco seasoning
2 cups Monterey Jack cheese, grated
2 cups Cheddar cheese, grated

In a bowl, combine beans, cream cheese and sour cream. Add green chilies, onion and seasoning. Mix well. Spread half of the mixture in a 9 x 13 baking dish. Then layer cheese on top. Spread remaining dip on top of the cheese. Bake at 350 for 30 minutes, or until bubbly. Serve with tortilla chips, crackers or fresh vegetables crudites.

Cream Cheese Dip

This has to be my all time favorite dip. It comes courtesy of my Aunt Shauna. I pretty much could eat the whole thing. I love the little kick it gets from the green chillies and all the cheesy goodness! You can't go wrong with this dip at your holiday parties or sporting events!


Ingredients:
8 oz cream cheese (softened)
1 1/2 cup sour cream
2 cup grated cheese
1 tsp Worcestershire sauce
1 cup. chopped ham
1 can green chilies 

1/2 cup green onions
2 baguette loaves

Mix together the cream cheese, sour cream and grated cheese. Then add Worcestershire sauce, ham, green chillies and green onions. Put in baking dish, or into a bread bowl. Bake at 350 for 1 hour and 10 min. Slice baguettes, and serve.

Pumpkin Dip

First off, I want to apologize for the horrible pictures lately. My camera is out of commission at the moment, so I am using my parents. It just isn't working right for me.

I don't know about you, but I am going through a major pumpkin obsession. I am sure it will stop after Thanksgiving though. A few weeks ago I saw this recipe on The Daily Dish. I knew I had to make it. The recipe on TV made a lot more than mine, so if you are feeding a LARGE group, just double this recipe. It is perfect for dipping apples or grapes, or for spreading on pumpkin bread or muffins. It is super simple and would be perfect to have on hand if you have guests stopping by!


Ingredients:

1 8oz container of Cool Whip
1 small box of vanilla pudding
1 cup pumpkin puree (I use Libby's)
1 teaspoon pumpkin pie spice

Combine cool whip, pudding, pumpkin and spice. Mix well. Refrigerate for at hour before serving!

Creamy Avocado Dip

I think there is a difference between guacamole and avocado dip. Guacamole is a little more "chunky" with tomatoes and onions, avocado dip is just simple. (My Personal Opinion) They both taste equally as great. This dip is perfect for chips, or to go along with tacos or burritos or a taco salad. Enjoy!

Ingredients:

3 ripe avocados
1 1/2 tablespoons sour cream
1 tablespoon lemon juice
1/4 teaspoon garlic powder
salt and pepper to taste 

Mash up avocados. For me it is easiest to use a fork or potato masher. Then add the rest of the ingredients. Mix well and serve!

Hummus

I'm in no way a vegetarian.  I love my proteins.  Let's be honest, if I could choose between a fatty meat filled appetizer, or a healthy vegetarian dish, my first choice isn't the healthy one.  However, this recipe could change my mind.  My daughter's birthday party, cupcakes and all, inspired me to at least have some healthy choices.  This was a perfect start to a perfect party.


Ingredients:
2 cans of chickpeas (garbanzo beans) stained. Keep 1/4 cup of the liquid
1/4 cup lemon juice
1/4 cup olive oil
1 clove garlic
1 tsp cayenne pepper
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
Pita Bread

Start by cutting your pita bread into small triangles. Brush some olive oil onto the triangles, and toast in a 400 degree oven for 10 minutes or until crispy.  While the bread is toasting, mix the ingredients together in a blender or food processor until creamy. If it's too thick you can thin it out sing a little bit of water from the beans. 

Serve cool with the pita or some vegetables slices like carrots or celery. This is great party dish, appetizer or anytime you want to feel good about yourself after pigging out.... enjoy!

Buffalo Chicken Dip

It was fight night, and Brooks was having the guys over. He promised them that he would make our queso...but I told him he needed to make something else too. I had seen all these recipes around Christmas time for this dip. We were at the store and didn't know what we needed so we just bought what we thought sounded good...the end result was AMAZING! A perfect dip for your next get together!

Ingredients
3/4  cup of Ranch Dressing
1/4 cup of Hot Wing sauce
1 1/2 cups shredded cheddar cheese
8 ounces cream cheese
2 10 ounce cans of chunked chicken-drained
salt and pepper

Mix together all ingredients in corning-ware or a glass pie dish. Bake at 350 for 20-25 minutes. Serve with tortilla chips, veggies, chicken crackers or a sliced baguette. This cures the cravings for chicken wings, and cheese dip in one delicious bite.

Strawberry Fruit Dip

This was one of those super quick, two minutes to make fruit dips. And it is seriously so good. I was at the grocery store and forgot I was bringing my friend dinner. I needed something simple. My friend Heather gave me this recipe...and it only needs TWO ingredients. It is the perfect dip for strawberries, banana, watermelon, apples...really anything! Enjoy!  
Ingredients:
1 jar of Marshmallow Cream
1 small container of Strawberry Cream Cheese

Mix together and chill for about an hour or two before serving.

Spinach Artichoke Dip

Oh how I love this dip. My kids even love it...even with veggies in it! Though I think all the cheese really takes away from the healthiness of it!
1 block Cream Cheese
1/2 cup shredded Mozzarella Cheese
1/2 cup shredded Parmesan Cheese
3/4 cup chopped frozen Spinach-thawed, rinsed and drained
1 can Artichoke Hearts-rinsed, drained and chopped
1/4 teaspoon Red Pepper Flakes
salt and pepper

I chopped my artichoke hearts (just because I don't like the dip to chunky). Then boil for about 5 minutes the artichoke hearts and spinach. While that is boiling, in the microwave heat the cream cheese for about 1 minute. Then add the mozzarella, Parmesan, seasonings, and spinach and artichokes. Put in serving dish and bake in the oven at 375 for about 20-25 minutes. Serve with sliced baguette or tortilla chips.

Onion Dip

I am always making snacks to watch the games every weekend, this is easy and everyone enjoys it!

1 16 oz container of Sour Cream
1 packet of Lipton Onion Soup mix

Mix together, and serve with chips!

Cream Cheese Toffee Apple Dip

Warning this is not healthy...but you are eating fruit-so it makes it somewhat good for you, right??
1 8oz block of cream cheese (softened)
1/4 cup sugar
1/2 cup brown sugar
1 teaspoon vanilla
1 cup toffee chips

Mix together and chill for at least an hour. Yum!

Cottage Cheese Clam Dip

I love whenever we have a family get together and my SIL Katie makes this yummy dip. I never thought I was a clam fan, but I am now!
1 16 oz container of Sour Cream
1 16 oz container of Cottage Cheese
1 tablespoon Worchesher Sauce
1/2 a package of Ranch Dressing - the dry mix
2 small cans of Minced Clams-drain

Mix together and serve with your favorite chips!

Chip and Veggie Dip

This is a family favorite. Growing up we would have this dip at all the family parties. I remember sitting around the counter eating this dip before the party even started. It is delish!

1 cup sour cream

3/4 cup mayonnaise
1 tablespoon dill weed
1 tablespoon bon appetite
1 tablespoon minced onions

Mix together and refrigerate for a few hours to let all the flavors "marry." Feel free to add as much or as little of the seasonings to your taste. Serve with potato chips and fresh veggies.

Avocado Salsa

I got this recipe from my good friend, Julie. I hope I do it justice!

3 tomatoes-diced
4 avocadoes-peeled and chopped
1 can of corn (or about 1/2 of a package of frozen thawed corn)
1 can of black beans, drained and rinsed
1/2 cup of red onion chopped
3/4 cup of chopped cilantro
3 limes-juiced (or about 1/2 cup of lime juice)
salt and pepper to taste

Mix all together and serve!

Queso

Ok, so this is one of my favorite things to make. It is super meaty and so yummy. Perfect game food!
1 lb sausage
1 lb hamburger

browned together

1 32 oz box of Velveeta
3 cans of Rotel tomatoes

Melt Velveeta on stove top, then add Rotel and meat. Let simmer for about 10-15 minutes before serving!
