Ice Cream Sandwich Torte

I am always in the mood for dessert...but not always in the mood to spend forever in the kitchen. Especially with it being so hot right now. We put this together in about 10 minutes. When we served it, everyone was impressed. So if you are in a pinch, but want something fabulous...make this!

Ingredients:

1 cup chopped Oreo Cookies (about 10-12)
1/2 cup milk
1 small box chocolate pudding
1 container whipped cream
12 rectangle ice cream sandwiches
mini chocolate chips or sprinkles

Chop cookies. Mix together pudding, milk, and half of the whipped cream. Once smooth, add in Oreo cookies. On a serving platter, arrange side by side, 6 ice cream sandwiches. Spread evenly the pudding mixture. Top with remaining ice cream sandwiches. Spread remaining whipped cream over top and sides. Top with chocolate chips or sprinkles. Freeze for at lease 30 minutes before serving.

Winger's Asphalt Pie

A few weeks ago I made my friend Lindsi dinner. The theme was "Winger's" night. I brought her a bag of popcorn, made this sticky finger salad, and of course asphalt pie. No Winger's dinner is complete without asphalt pie. I forgot to sprinkle the reserved Oreo's on top, but it was still great.  It is quick, easy, and delish!


Ingredients

2 1/4 cups crushed Oreo cookies
4 tablespoons butter, melted
1/2 gallon mint chocolate chip ice cream, softened
hot fudge
caramel sauce
Ready Whip whipped cream

Combine 2 cups of Oreos and the melted butter. Press down onto a 9 inch pie pan. Then add about 1/4 cup of hot fudge. Scoop ice cream onto the crust until pie is completely covered. Put in freezer for about 3-4 hours. Before serving top with reserved Oreos, caramel sauce and whip cream!

Cookies n' Cream Ice Cream

Don't ya just love homemade ice cream? It tastes so different then the carton you buy at the grocery store. Brooks' Mom and Sister came to visit us from Florida this past week. Since we don't have Blue Bell ice cream in Utah, homemade will have to do:) We used our Cuisinart ice cream maker, which I think every one should have. It is so quick and easy to make ice cream at home and we just love it!



Ingredients:
1 1/2 cups whole milk
1 1/4 cup sugar
3 cups heavy cream
1 1/2 pure vanilla extract
2 cups oreo cookies, chopped coarsly

Whith a hand mixer combine the whole milk and sugar. Then add heavy cream and vanilla. Stir well. Slowly pour into ice cream freezer bowl. Let mix until thick. After about 20 minutes, add the oreo cookies. Then mix for another 5-10 minutes. We like to freeze ours in an air tight container for another 2 hours for a more firm ice cream.
