Oh how I love sweet and sour chicken...love the peppers, onions, and chicken. Though, I am not a fan of pineapple...I do love the flavor that it gives this dish. This is a quick dish and a perfect way to get your kids to eat their veggies.
Serves 5
Ingredients:
3 chicken breasts
1/2 cup flour
1/4 cup corn starch
1 egg
salt and pepper
oil
Heat oil in a frying pan. Mix cornstarch, flour and salt and pepper. In a separate bowl beat egg. Cut chicken into bite size pieces...dip into egg and then into the flour. Brown in oil...but don't fully cook.
Veggies:
red and green pepper
red onion
pineapple
Cut into chunks your peppers, onion and pineapple. Set aside.
Sauce:
1 cup water
1 cup pineapple juice
2 cups ketchup
1 cup sugar
3 tablespoons soy sauce
2 tablespoons vinegar
Mix together sauce...place chicken and veggies in a 9x13 pan. Pour sauce over chicken. Bake at 350 for 45 minutes and serve over rice.
