Cornbread Stuffing

This Southern classic is a must have at your Thanksgiving table. This recipe is our take on one found my Emeril. Enjoy!


olive oil
1/2 cup onion chopped
1/2 lb your favorite breakfast sausage
1/2 lb smoked sausage (ie. kielbasa)
1/4 cup green onion
3/4cup celery chopped
1 green bell pepper-chopped
1 garlic clove-minced
3-4 cups cornbread-crumbled
2 cup chicken stock
We don't measure, but just add a little bit of poultry seasoning, sage and thyme (about 1/2 teaspoon of each)
Salt and Pepper

Saute up the sausages and onion. Then add green onions, celery, bell pepper, and garlic. Then stir in cornbread and chicken stock and seasonings. Stir for about 3 minutes. Put in baking dish and bake at 350 for 25-30 minutes!
