Eclair Cake

This little dessert is one of my favorites of all time. I love when my mom makes this...or my friend Heather! It is so good, that you think it should be a little more difficult to make! So next time you have a party this is the dessert you will want to make!

Ingredients

1 stick of butter
1 cup water
1 cup flour
4 eggs

On the stove, melt the butter. Whisk in the water, and then the flour. Once incorporated add the eggs. Once well mixed, put into a cookie sheet and bake at 400 for 23-25 minutes. Then let cool.

2 small packages instant vanilla pudding
8 ounces cream cheese (soft)
3 cups milk

Mix together all these ingredients, and let set in fridge for about 30 minutes. Then remove and top on the eclair. Then top with cool whip.

1/2 cup chocolate chips
3 tablespoons milk
2 tablespoons butter
1 cup powder sugar

Melt in the microwave the chocolate chips and butter. Then stir in the milk and powder sugar. Once well incorporated, drizzle on top of the whip cream. Put in the fridge for at least an hour before serving. Enjoy!

Hi Kathryn,
I used a 13 x 18 cookie sheet. Hope that helps!
